Vegan Cinnamon Rolls:
For the dough:
2 cups of soy milk (room temperature)
1/2 cup of melted margarine (I used a vegan one)
1/4 cup of brown sugar
1 pack of fresh yeast of 25 grams
5 cups of flour
1 teaspoon of salt
For the filling:
3 tablespoons of cinnamon powder
170 grams of butter (I used a vegan one)
170 grams of brown sugar
For the icing
1/2 cup of powdered brown sugar
1/2 cup of oatmeal cream
1 teaspoon vanilla extract
First the dough:
In a bowl mix together the soy milk, melted margarine, sugar and yeast. Mix well, without beating a lot and let stand for a minute.
After a minute add the flour and salt to this mixture and stir with a wooden spoon, combining everything very well. Cover with a towel and let stand for one hour.
After this time the dough will have grown twice its size. Remove the towel and knead dusted with a bit of flour until it no longer sticks to your hands.
Take the dough to a floured surface and spread it with a roller to form a large rectangle. Now put on the rectangle the ingredients of the filling, first the margarine that you will spread with the help of a brush, then the brown sugar and finally the cinnamon powder.
Roll up the rectangle forming a log. Then cut it, about 1 1/2 inches each piece. Place the rolls in a pre-buttered baking tray. Cover with plastic and let stand for 30 more minutes.
After this time remove the plastic and bake at 200 degrees Celsius (350 degrees Fahrenheit) for 20 minutes.
Now the icing:
Mix the oatmeal cream with the sugar and the vanilla extract. Mix well until the sugar dissolves.
When the cinnamon rolls are ready, drizzle them with the icing and enjoy!
