Today we are celebrating Mother’s Day in Spain and as every Sunday for our breakfast, I like to make something special. My smaller asked me for pancakes, but we made pancakes very often and as this is the breakfast for my own Mother’s Day celebration, I wanted something new. So changing a little the mix of the pancakes, I came out with this delicious crepes. 

I ate them with brown sugar just to feel the proper French touch; my kids more anxious and creative, put some Nutella, syrup and some whipped cream on it. All of them were very yummy!!

Vegan pancakes 

1 cup whole-wheat flour

1/2 cup vegetable drink

1/2 cup water

2 tablespoon coconut margarine

1 tablespoon brown sugar

1 tablespoon agave syrup

1/4 teaspoon salt


Mix well all the ingredients in a bowl. Make the crepes in a pan using a little bit of margarine every time, to avoid them from sticking. Enjoy!
