Hello everyone!!

With the many things that we mothers have to do in the day, the truth is, many times we lack of time! In my case, by dinner time I’m already tired and have almost no ideas left. The only thing I want is to do something quick and easy but at the same time it have to be nutritious for my kids.

Today I have prepared a delicious potato cake that my kids loved it! And I swear to you the preparation didn’t take me more than 15 minutes. It‘s super easy and extremely delicious.

Vegan potato cake

For the filling:

2 chopped carrots

1/2 chopped onion

1 cup chopped chiitake mushrooms

1/4 chopped yellow pepper

1/4 chopped green pepper

1/4 red chopped pepper

3 minced garlic cloves

1 tablespoon of coconut oil

1/2 teaspoon of cayenne pepper 

1/2 teaspoon oregano powder

1 cup of tomato sauce 

1/2 cup of vegetable broth

1 cup of watercress

1 cup of spinach

1/2 cup of canned peas

1 tablespoon of flour

Salt and pepper to taste

For the mashed potatoes 

5 potatoes

1/4 cup soy milk

Salt and pepper to taste

Method for filling:

In the coconut oil sauté carrots, onions, peppers, garlic, chiitake mushrooms; cook for 8 minutes. Then add the spices: salt, pepper, oregano, paprika. Also add the fried tomato, flour, vegetable broth, watercress, spinach and canned peas. Let cook and remove from heat. Set aside.

Method for mashed potatoes:

Wash and peel the potatoes, boil them and when they are soft mash them adding  the soy milk, salt and pepper.

In a oven safe container, place the vegetables and cover it with the mashed potatoes (see video of the recipe) bake at 180 degrees Celsius (350 degrees for 15 minutes)
