Today we had a family reunion at home, and of course, as in all our family gatherings, food plays a very important role. And is that with a good meal at the table we make sure that no member is missing, because while there is food, everybody is at the table 😂 and of course, we are all happy.

On this occasion everyone brought a plate, so the table looked super colorful. I made vegan mini sandwiches and they were delicious! I used Jackfruit to make it like pulled ”pork”.

Canned Jackfruit

Jackfruit is a tropical fruit native to Asia that can substitute meat, crab or even tuna in your dishes. Besides being super tasty, this fruit is an excellent source of vitamins A, B and C, high in dietary fiber, rich in amino acids and has a high content of magnesium and potassium. With this ingredient you can enjoy healthy and compassionate meals. That is why the Jackfruit has become an essential ally for those who have decided to take an animal cruelty free diet.

Here I share the recipe for this tasty dish. To complement my sandwich I used canned vegetables, canned pineapple and onions. You can complement yours with whatever you like!

Vegan Pulled “pork” sandwich

Ingredients:

2 cups of canned Jackfruit. Drained and crumbled.
1 medium onion chopped
3 cloves of garlic chopped
1 teaspoon of salt
1 teaspoon of pepper
1 teaspoon of cumin
1 teaspoon of sweet paprika
1/2 teaspoon of spicy paprika
1 cup of vegetable broth
1 tablespoon of olive oil
4 tablespoons of vegan barbecue sauce (divided 2 and 2)

Method:

In a pan put the olive oil and sauté the onion and the garlic. Add the Jackfruit drained and shredded. Then add the spices; Salt, pepper, cumin, sweet paprika, spicy paprika and finally add the chicken broth. Cover and let cook for 15 to 20 minutes.

After this time uncover and add two tablespoons of the barbecue sauce. Mix and remove from heat.

Place the stew in a baking sheet over aluminum foil and bake at 200 degrees Celsius (390 degrees Fahrenheit) for 15 minutes. Take it out of the oven and put the remaining barbecue sauce.

After this, the jackfruit will be ready for some super tasty sandwiches.
