Every year on Christmas Eve the whole family comes home for dinner. Cooking on Christmas Eve for them fills me with enthusiasm and this year has been a challenge since I wanted to change the whole menu to vegan. Although in my family the only vegan is me, I honestly didn´t want on my dining table anything that goes against my new lifestyle. To be honest, I had no idea what I would do and the more I thought about it, the less I knew. Until I decided to do something very risky, which was to make the typical dishes of my home country in a vegan version. A lot of work, but a lot of hope and happiness!

On this occasion I will share one of the dishes that are always present for Christmas in the Dominican Republic. These patties are one of my favorite dishes for these dates, so this year I made my vegan version to enjoy them as always. They are traditionally stuffed with beef or chicken and the dough is made with eggs, of course I have replaced all that. I have made a filling of sweet potato and spinach, although it is not very common, I love this combination! And the truth is that they come out delicious!

The idea of ​​sharing this recipe today is because you still have time to make them for dinner on December 31st if you’ll like to. They are very simple and easy to make and as always, you know that I like to share recipes with easy-to-find ingredients. I know your guest will be delighted.

Patties with sweet potato and spinach filling


For the dough:

3 cups of all-purpose flour

90 grams of Margarine (I used vegan corn margarine)

1/2 cup of water

1 teaspoon of salt

1 teaspoon of baking powder

1/2 teaspoon of baking soda

For the filling:

50 milliliters of water

1 sweet potato peeled and diced

1/2 tablespoon of coconut oil

2 cups of cut spinach

1 minced celery

2 tablespoons of chopped parsley

2 cloves of garlic, mashed

1 teaspoon of pepper

1 teaspoon of salt

2 teaspoons of curry powder

1/2 teaspoon of turmeric


We will make the dough first to let it rest while we make the filling.

In a deep bowl, put the flour, salt, baking powder and baking soda. Mix and then add the margarine. Mix well with your hands, integrating the margarine into the flour.

When everything is well integrated add the water little by little, adding a little water and kneading at the same time with your hands, so you can know when is ready without adding too much water. The dough should not be too wet, it should be soft and not sticky. When ready, wrap it in plastic paper and let it stand for 10 minutes.

Meanwhile let’s make the filling:

In a pan put the water and the chopped sweet potato, cover and let cook for 5 minutes.

When the water evaporates add the tablespoon of coconut oil, celery, parsley, and two cups of spinach. Stir well and add the spices; salt, pepper, ginger and turmeric. Cook for 5 minutes and ready.

For the assembly:

Extend the dough on a floured surface; With the help of a cutter, cut into circles. Put the filling in the center of one of the little circles, with a brush, wet the shore with a little water, put another small circle on top and seal it with a fork. Deep-fry in hot oil and drain on paper towel.
