I love quiche and now that I am adapting all my recipes to the vegan version, this is one I had pending. So yesterday I started experimenting and how delicious it was! The result was a delicious dish with an irresistible mix of flavors. As always, the children loved it! Well, everyone except Maria Jose, who, unlike Alex and Sara, is a super bad eater and I do not know what to do to make her eat vegetables, 🤦🏽‍♀️ I guess she just need time. If someone has a trick to make kids eating all the veggies please 🙏🏽 tell me in the comments.

And now the recipe 👇🏽


For the dough 

2 cups of chickpea flour
1 teaspoon of salt
2 teaspoons of extra virgin olive oil
100 milliliters of water

For the filling:

1 medium sweet potato chopped into pieces
2 cups of spinach
1 small chopped onion
1 homemade vegetable cube (recipe here)
1 teaspoon of extra virgin olive oil
A pinch of water
150 grams of Tofu
100 milliliters of water
2 teaspoons of turmeric
1 teaspoon sesame seeds
1 spoons of oregano powder
1 teaspoon of pepper
1 teaspoon of salt

Method for the dough:

Mix all ingredients in a bowl. Knead and form a ball, take to the refrigerator covered with transparent film or in a ziploc bag. Leave in the refrigerator while preparing the filling.

Method for the filling:

In the olive oil, sauté the sweet potato with the onion, add the pinch of water and cook covered over medium heat for 10 minutes. After this time add the spinach, mix and cover again and cook until the spinach is ready, about 5 minutes. Remove from heat and set aside.

Put the tofu in the blender, with the turmeric, oregano, pepper, sesame seeds, salt and the 100 milliliters of water. Process until everything is integrated and add this mixture to the sweet potato and spinach, mix well.

Let´s put it together!

Now, remember the dough in the fridge? 😂 Take it out and spread it with a rolling pin on a surface greased with a little olive oil. Without pressing too much, only extending the dough to obtain the desired size, which will be like the quiche mold you are going to use. Carefully place the dough in the previously greased mold and arrange well.

Prick the bottom of the dough with a fork and place the filling. Bake in oven at 200 degrees Celsius (390 Fahrenheit) for 20 minutes.
