For me the best recipes are those that are practical and simple, with ingredients that we all normally have at home or that are easy to find without any complications! The other day I really wanted pasta! But I wanted something different. Thinking and thinking, since I like curry so much and with the vegetables I had in the fridge, I decided to try curry pasta and this is the result! A delicious, healthy and of course vegan pasta. You will be surprised how easy and fast this recipe is.

I hope you try to do it at home and enjoy it as much as I did.


300 gr of spaghetti
1 cup of broccoli
1 cup of eggplant cut into cubes
1 cup of zucchini cut into cubes
1/2 cup of Brussels sprouts cut into fourth
Half yellow pepper in slices
Half green pepper in slices
2 cups of coconut milk
1 tablespoon of curry powder
1 teaspoon of ginger
1/2 teaspoon of cinnamon
A cube of homemade vegetables (recipe here)
1 teaspoon of coconut oil
A pinch of pepper
Sesame seed


Cook the pasta and set aside.

In a pot put the coconut oil in with all the vegetables, the coconut milk, the vegetable cube and the spices; curry, cinnamon, ginger and pepper. Add the crushed cashews and leave over medium heat for only 8 minutes so that the vegetables don´t cook too much. The good thing about this recipe is that the vegetables are firm.

After this time add the pasta already cooked and mix well with the vegetables and ready!


Once served, sprinkle with the sesame seeds.

A super easy and quick recipe and at the same time delicious.
