What did you have for breakfast today? We had these FREE RANGED EGGS with veggies. I called them Divine Eggs, because they are just amazingly delicious!

If you like eggs, you just going to love this recipe! It´s delicious and full of nutrients, perfect to start the day.

Always remember to choose products with conscience and responsibility and make sure that no animal has been mistreated. For this recipe, I’m using free ranged eggs from a local market, it’s quality lies precisely in the care, love and attention that the farmers give to the hens. Remember also that the levels of nutrition in free ranged eggs are being shown to be significantly better than caged eggs.

Ingredients:

FullSizeRender 71 teaspoon olive oil
1/2 onion diced
1/4 yellow pepper
1/4 green pepper
1/4 red pepper
1 medium size sweet potato cut into cubes
1 medium eggplant cut into cubes
A blink of water
1/2 zucchini cut into cubes
Salt
Pepper
Oregano

For the sauce
1 cup fried tomato
1/2 cup cream

Method:
In the olive oil sauté the onion, the peppers, add the sweet potatoes and the eggplant. Cover and cook over medium heat for 11 minutes. Check it from time to time and don´t allow it to stick to the pan.

After 11 minutes, add the zucchini, salt, pepper and oregano., Mix and cover again for another 7 minutes more.

Separately, prepare the sauce by mixing the tomato sauce with the cream.

Add the sauce to the pan, stir to combine ingredients and place eggs on top. Cover again to allow let the eggs to cook.
