My second recipe, yeii!! I’m really enjoying cooking to bring you my recipes. This is so much fun and fills me with emotion! This time I’m sharing with you these delicious Vegetarian, Vegan, gluten free Tacos. I hope you like them like my children, God! They really devoured them! 😂
Lets go to the recipe!!
One package of gluten free corn tortilla
200 gr of fresh sliced white Mushroom
200 gr of fresh chanterelle Mushrooms
200 gr of fresh Shiitake Mushrooms
1/2 tablespoon extra virgin olive oil
3 garlic cloves crushed with their shell
Black beans cooked and drained
1 sliced avocado
Hot sauce of your preference
For the Tacos sauce:
1 chopped onion
1 diced tomato
1/2 jalapeño cut and clean without seed
1 green pepper roasted
1 lemon squeezed
Cut into small cubes and mix all the ingredients of the taco sauce. Mix to integrate. Set aside.
Now we’ll sauté the mushrooms separately.
Cut the mushrooms like fajitas.
In a hot pan add 1/2 tablespoon of extra virgin olive oil and a clove of garlic, sauté the 200 gr of white mushroom. Stir until golden brown, extending then in the pan with a wooden spoon to prevent them from coming together to avoid from filling with liquid. Once golden brown remove them from the pan, set aside.
Do the same procedure with fresh chanterelles and shiitake. Remember to put each group of mushrooms in separate containers.
Now let’s put our Tacos together!
But first heat the tortillas in a frying pan or in the microwave (to heat them in the microwave wrapped them all together in a clean dishcloth).
In a warm tortilla put mushrooms, taco sauce, black beans, avocado and hot sauce. Enjoy this simple to do, light, healthy and full of fiber recipe with your friends and family.
